Description

Make delicious zucchini banana bread at home. This recipe combines the goodness of zucchini and banana for a moist and flavorful treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • 1 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together oil, granulated sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla.
  4. Add mashed bananas and zucchini to the wet ingredients and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in nuts, if desired.
  7. Pour batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
