Ingredients

  • 1 lb ground beef, lean
  • 1 packet taco seasoning, reduced sodium
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes and green chilies, undrained
  • 6 corn tortillas, cut into wedges
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet over medium heat. Drain any excess fat.
  3. Stir in taco seasoning and cook according to package directions.
  4. In a large bowl, combine cooked ground beef, black beans, corn, and diced tomatoes and green chilies.
  5. In a 9×13 inch baking dish, layer half of the tortilla wedges, then half of the beef mixture, and half of the cheese.
  6. Repeat layers with remaining tortilla wedges, beef mixture, and cheese.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Garnish with green onions before serving.

Notes

  • For extra flavor, add a layer of salsa between the beef mixture and cheese.
  • You can substitute ground turkey or chicken for ground beef.
  • Adjust the amount of taco seasoning to your preference.
