- 1 lb ground beef, lean
- 1 packet taco seasoning, reduced sodium
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 6 corn tortillas, cut into wedges
- 1 cup reduced-fat shredded cheddar cheese
- 1/4 cup chopped green onions, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain any excess fat.
- Stir in taco seasoning and cook according to package directions.
- In a large bowl, combine cooked ground beef, black beans, corn, and diced tomatoes and green chilies.
- In a 9×13 inch baking dish, layer half of the tortilla wedges, then half of the beef mixture, and half of the cheese.
- Repeat layers with remaining tortilla wedges, beef mixture, and cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Garnish with green onions before serving.
Notes
- For extra flavor, add a layer of salsa between the beef mixture and cheese.
- You can substitute ground turkey or chicken for ground beef.
- Adjust the amount of taco seasoning to your preference.
