- 1 lb ground beef, lean
- 1 packet taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 6 whole wheat tortillas, cut into wedges
- 1 cup reduced-fat shredded cheddar cheese
- Optional toppings: salsa, sour cream, avocado
Instructions
- Preheat oven to 350°F (175°C).
- Brown ground beef in a skillet over medium heat; drain any excess grease.
- Stir in taco seasoning, black beans, corn, and diced tomatoes and green chilies.
- Simmer for 5 minutes.
- In a 9×13 inch baking dish, layer half of the tortilla wedges, followed by half of the beef mixture and half of the cheese.
- Repeat layers.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving.
- Top with your favorite toppings.
Notes
- You can substitute ground turkey for ground beef.
- Add more vegetables like bell peppers or onions.
- For a spicier casserole, use a hotter taco seasoning or add a pinch of cayenne pepper.
