Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a loaf pan.
  3. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a separate bowl, combine pumpkin puree, granulated sugar, brown sugar, oil, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the vegan chocolate chips.
  7. Pour batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, use dark chocolate chips.
  • You can add chopped nuts to the batter for extra texture.
