Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 1/2 cups grated zucchini

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease or line a 12-cup muffin tin.
  3. In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. In a separate bowl, combine sugar, oil, vanilla, and eggs. Beat well.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Stir in zucchini.
  7. Fill muffin cups about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
