- 2 medium zucchini, grated
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh dill
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Grate zucchini and place in a colander. Sprinkle with salt and let sit for 15 minutes to drain excess moisture.
- Squeeze zucchini to remove as much liquid as possible.
- In a bowl, combine zucchini, egg, flour, Parmesan cheese, and dill. Season with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Drop spoonfuls of zucchini mixture into the hot oil and flatten slightly.
- Cook for 3-4 minutes per side, until golden brown and cooked through.
- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
- Serve immediately.
Notes
- You can add other herbs or spices to the fritters, such as garlic powder or onion powder.
- Serve with a dollop of sour cream or yogurt.
- For a crispier fritter, use a higher heat and don’t overcrowd the pan.
