- 1 cup glutinous rice
- 1 can (13.5 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Rice paper wrappers
Instructions
- Rinse glutinous rice and soak in water for at least 4 hours, or overnight.
- Drain rice and steam for 20-25 minutes, or until cooked through.
- While rice is steaming, combine coconut milk, sugar, and salt in a saucepan. Heat over medium heat, stirring until sugar is dissolved. Do not boil.
- Once rice is cooked, transfer it to a bowl and pour coconut milk mixture over it. Stir well and let it sit for 15-20 minutes, allowing the rice to absorb the liquid.
- Lay a rice paper wrapper on a flat surface. Dip it in warm water for a few seconds to soften.
- Place a spoonful of sticky rice and a slice of mango in the center of the wrapper.
- Fold the sides of the wrapper inward, then roll it up tightly.
- Repeat with remaining ingredients. Serve immediately or chill for later.
Notes
- You can adjust the amount of sugar to your preference.
- For a richer flavor, use full-fat coconut milk.
- Store leftover rolls in the refrigerator.
