Description

A classic dessert combining tart rhubarb and sweet strawberries with a crunchy oat topping.


Ingredients

  • 3 cups chopped rhubarb
  • 3 cups sliced strawberries
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix rhubarb, strawberries, sugar, and cornstarch in a bowl.
  3. Pour fruit mixture into a baking dish.
  4. Combine oats, flour, brown sugar, cinnamon, and salt in another bowl.
  5. Cut in butter until mixture resembles coarse crumbs.
  6. Sprinkle topping evenly over fruit.
  7. Bake for 35-40 minutes until golden and bubbly.
  8. Let cool slightly before serving.
