Description

Delicious and healthy strawberry oatmeal bars made with almond flour.


Ingredients

Scale
  • 1 1/2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine oats, almond flour, brown sugar, baking soda, and salt.
  3. Stir in melted butter, honey, and vanilla extract until well combined.
  4. Press half of the mixture into the bottom of an 8×8 inch baking pan.
  5. Spread diced strawberries evenly over the crust.
  6. Crumble remaining oat mixture over the strawberries.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.

Notes

  • You can use frozen strawberries if fresh are not available.
  • Store bars in an airtight container at room temperature.
