Description

A flavorful and healthy shrimp bowl with smoky chipotle and lime flavors.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 chipotle peppers in adobo sauce, minced
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 avocado, sliced
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, combine shrimp, chipotle peppers, lime juice, olive oil, smoked paprika, garlic powder, salt, and pepper. Marinate for 15 minutes.
  2. Heat a skillet over medium-high heat. Add shrimp and cook for 3-5 minutes, or until pink and cooked through.
  3. Assemble bowls with rice, avocado, black beans, corn, and cilantro.
  4. Top with cooked shrimp.
  5. Serve immediately.

Notes

  • Adjust the amount of chipotle peppers to your desired spice level.
  • You can use frozen shrimp, just make sure to thaw them completely before marinating.
