Ingredients

- 1 pound shrimp, peeled and deveined
- 2 chipotle peppers in adobo sauce, minced
- 2 limes, juiced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 avocado, sliced
- 1/2 cup black beans
- 1/2 cup corn
- 1/4 cup chopped cilantro
Instructions
- In a bowl, combine shrimp, chipotle peppers, lime juice, olive oil, smoked paprika, garlic powder, salt, and pepper. Marinate for 15 minutes.
- Heat a skillet over medium-high heat. Add shrimp and cook for 3-5 minutes, or until pink and cooked through.
- Assemble bowls with rice, avocado, black beans, corn, and cilantro.
- Top with cooked shrimp.
- Serve immediately.
Notes
- Adjust the amount of chipotle peppers to your desired spice level.
- You can use frozen shrimp, just make sure to thaw them completely before marinating.
- Add other toppings as desired, such as salsa, sour cream, or cheese.
