- 1 lb shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 30 seconds.
- Add orzo and stir to coat with oil. Toast for 1-2 minutes.
- Pour in broth and bring to a simmer. Cook orzo until tender, about 10 minutes.
- Season shrimp with salt and pepper, then add to the skillet. Cook until pink, about 3-4 minutes.
- Stir in lemon juice and parsley. Serve warm.
