Description

Make crispy zucchini fritters quickly and easily.


Ingredients

Scale
  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1 large egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Grate zucchini and place in a colander. Sprinkle with salt and let sit for 15 minutes to drain excess moisture.
  2. Squeeze zucchini to remove as much liquid as possible.
  3. In a bowl, combine zucchini, egg, flour, Parmesan cheese, parsley, and pepper.
  4. Heat olive oil in a large skillet over medium heat.
  5. Drop spoonfuls of zucchini mixture into the hot oil and flatten slightly.
  6. Cook for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
  8. Serve immediately.

Notes

  • For extra crispy fritters, squeeze out as much moisture as possible from the zucchini.
  • You can substitute other cheeses for Parmesan, such as Pecorino Romano or Asiago.
  • Add a pinch of red pepper flakes for a little heat.
