Make crispy zucchini fritters quickly and easily.
Ingredients

- 2 medium zucchini, grated
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Grate zucchini and place in a colander. Sprinkle with salt and let sit for 15 minutes to drain excess moisture.
- Squeeze zucchini to remove as much liquid as possible.
- In a bowl, combine zucchini, egg, flour, Parmesan cheese, parsley, and pepper.
- Heat olive oil in a large skillet over medium heat.
- Drop spoonfuls of zucchini mixture into the hot oil and flatten slightly.
- Cook for 2-3 minutes per side, or until golden brown and crispy.
- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
- Serve immediately.
Notes
- For extra crispy fritters, squeeze out as much moisture as possible from the zucchini.
- You can substitute other cheeses for Parmesan, such as Pecorino Romano or Asiago.
- Add a pinch of red pepper flakes for a little heat.
