Description

Enjoy a simple and healthy plantain fufu and okra soup. This dish is easy to make and full of flavor.


Ingredients

Scale
  • 2 green plantains, peeled and chopped
  • 4 cups water
  • 1 pound okra, chopped
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 scotch bonnet pepper, minced (optional)
  • 2 tablespoons palm oil
  • 1 teaspoon ground crayfish
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Blend plantains with water until smooth.
  2. Pour into a pot and cook over medium heat, stirring constantly until it forms a dough-like consistency (fufu).
  3. Set fufu aside.
  4. In a separate pot, heat palm oil.
  5. Add onion and bell pepper, cook until softened.
  6. Add okra, scotch bonnet pepper (if using), crayfish, salt, and pepper.
  7. Cook until okra is tender.
  8. Serve okra soup with plantain fufu.
