Enjoy a simple and healthy plantain fufu and okra soup. This dish is easy to make and full of flavor.
Ingredients

- 2 green plantains, peeled and chopped
- 4 cups water
- 1 pound okra, chopped
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 scotch bonnet pepper, minced (optional)
- 2 tablespoons palm oil
- 1 teaspoon ground crayfish
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Blend plantains with water until smooth.
- Pour into a pot and cook over medium heat, stirring constantly until it forms a dough-like consistency (fufu).
- Set fufu aside.
- In a separate pot, heat palm oil.
- Add onion and bell pepper, cook until softened.
- Add okra, scotch bonnet pepper (if using), crayfish, salt, and pepper.
- Cook until okra is tender.
- Serve okra soup with plantain fufu.

- Adjust pepper to your spice preference.
- You can add other vegetables or protein to the okra soup.
