- 1/4 cup heavy cream

- 1/2 cup pecan halves, finely chopped
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a saucepan, melt butter over medium heat.
- Stir in erythritol and heavy cream. Bring to a simmer, stirring constantly.
- Remove from heat and stir in vanilla extract and chopped pecans.
- Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until golden brown.
- Let cool completely on the baking sheet before removing.
