- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated zucchini
- For the Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, beat eggs and sugar until light and fluffy. Gradually add oil and vanilla extract.
- Add dry ingredients to wet ingredients, mixing until just combined.
- Stir in grated zucchini.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool completely before frosting.
- For the frosting: In a mixing bowl, beat cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, beating until combined.
- Stir in vanilla extract and milk until desired consistency is reached.
- Frost cooled zucchini bars.
- Cut into squares and serve.
Notes
- Adjust sweetness of frosting to your preference.
- Store in refrigerator for best results.
