- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon almond extract
- 1/2 cup milk
- 1 cup dried apricots, chopped
- 1/2 cup sliced almonds
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in almond extract.
- Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients.
- Fold in chopped dried apricots and sliced almonds.
- Pour batter into prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes before inverting onto a wire rack to cool completely.
Notes
- For a richer flavor, toast the almonds before adding them to the batter.
- Store leftover cake in an airtight container at room temperature.
