Description

A simple and delicious lemon cake inspired by Meghan Markle. Perfect for afternoon tea or a light dessert.


Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (113g) unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (120ml) whole milk
  • Zest of 2 lemons
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Cream together the sugar and butter until light and fluffy.
  3. Beat in the eggs one at a time.
  4. In a separate bowl, whisk the flour, baking powder, and salt.
  5. Alternate adding the dry ingredients and milk to the butter mixture, mixing until combined.
  6. Fold in the lemon zest and juice.
  7. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Use room temperature ingredients for best results.
  • Adjust lemon zest to taste for a stronger or milder lemon flavor.
