Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1/2 red onion, sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, oil-packed, drained
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss chicken, zucchini, bell pepper, red onion, olives, sun-dried tomatoes, and garlic with olive oil, oregano, basil, red pepper flakes (if using), salt, and pepper.
  3. Spread the mixture evenly in a baking dish.
  4. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  5. Sprinkle with feta cheese before serving.

Notes

  • You can add other vegetables like eggplant or yellow squash.
  • Adjust the amount of red pepper flakes to your preference.
