- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 medium zucchini, sliced
- 1 red bell pepper, chopped
- 1/2 red onion, sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup sun-dried tomatoes, oil-packed, drained
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, toss chicken, zucchini, bell pepper, red onion, olives, sun-dried tomatoes, and garlic with olive oil, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Spread the mixture evenly in a baking dish.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Sprinkle with feta cheese before serving.
Notes
- You can add other vegetables like eggplant or yellow squash.
- Adjust the amount of red pepper flakes to your preference.
