Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 pita breads
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sliced red onion
- Creamy Feta Tzatziki (recipe follows)
Creamy Feta Tzatziki:
- 1 cup Greek yogurt
- 1/2 cup crumbled feta cheese
- 1/4 cup grated cucumber, excess liquid squeezed out
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tbsp chopped fresh dill
- Salt and pepper to taste
Instructions
- In a bowl, mix chicken with olive oil, oregano, garlic powder, salt, and pepper.
- Heat a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 5-7 minutes.
- Prepare Creamy Feta Tzatziki: In a bowl, combine Greek yogurt, feta, cucumber, lemon juice, garlic, olive oil, dill, salt, and pepper. Mix well.
- Warm pita breads.
- Assemble gyros: Spread Creamy Feta Tzatziki on pita bread. Add chicken, lettuce, tomatoes, and red onion.
- Serve immediately.
Notes
- For best results, marinate chicken for at least 30 minutes before cooking.
- Adjust Creamy Feta Tzatziki ingredients to your taste.
- You can use chicken breast instead of thighs, but thighs will be more moist.
