Ingredients

- 1 pound shrimp, peeled and deveined
- 2 medium zucchini, spiralized into noodles
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons chopped parsley
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
- Stir in lemon juice and parsley. Season with salt and pepper.
- Add zucchini noodles to the skillet and toss to coat. Cook for 1-2 minutes, until zucchini is slightly tender.
- Serve immediately.
Notes
- For extra flavor, marinate the shrimp in lemon juice, garlic, and olive oil for 30 minutes before cooking.
- Do not overcook the zucchini noodles or they will become mushy.
- Serve with a sprinkle of parmesan cheese, if desired.
