Description

Quick and easy lemon garlic shrimp with zucchini noodles. A healthy and flavorful meal ready in minutes.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchini, spiralized into noodles
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons chopped parsley
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  4. Stir in lemon juice and parsley. Season with salt and pepper.
  5. Add zucchini noodles to the skillet and toss to coat. Cook for 1-2 minutes, until zucchini is slightly tender.
  6. Serve immediately.

Notes

  • For extra flavor, marinate the shrimp in lemon juice, garlic, and olive oil for 30 minutes before cooking.
