Ingredients

- 2 large leeks, sliced
- 2 cups kale, chopped
- 4 eggs
- 1 tbsp fresh sage, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add leeks and sauté until softened, about 5 minutes.
- Stir in kale and cook until wilted, about 3 minutes.
- Push the leek and kale mixture to the sides of the pan.
- Crack eggs into the center and sprinkle with sage.
- Cook eggs to your preferred doneness.
- Season with salt and pepper.
- Serve hot.
