Description
A flavorful Burmese noodle soup with coconut milk and spices.
Ingredients

- 2 cups coconut milk
- 1 cup chicken broth
- 200g chicken breast, sliced
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tbsp fish sauce
- 1 tsp turmeric powder
- 1 tsp chili powder
- 200g egg noodles
- 1 lime, cut into wedges
- 2 tbsp cilantro, chopped
- 2 tbsp fried onions
Instructions
- Heat oil in a pot and sauté ginger and garlic for 1 minute.
- Add chicken slices and cook until browned.
- Pour in coconut milk and chicken broth. Bring to a boil.
- Add turmeric, chili powder, and fish sauce. Simmer for 10 minutes.
- Cook egg noodles separately according to package instructions.
- Serve soup over noodles. Garnish with lime, cilantro, and fried onions.
Notes
- Adjust chili powder for preferred spice level.
- Use shrimp or tofu for a vegetarian version.
