- 6 large banana peppers
- 1 pound Italian sausage, removed from casing
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
Instructions
- Preheat oven to 375°F (190°C).
- Cut banana peppers lengthwise, remove seeds and membranes.
- In a skillet, brown Italian sausage over medium heat. Drain excess fat.
- Add onion and garlic to the skillet, cook until softened.
- Stir in cooked rice, Parmesan cheese, parsley, and Italian seasoning. Season with salt and pepper.
- Stuff banana peppers with sausage mixture.
- Place stuffed peppers in a baking dish and top with marinara sauce.
- Bake for 25-30 minutes, or until peppers are tender and filling is heated through.
- Serve hot.
Notes
- For spicier peppers, leave some seeds in.
- You can substitute ground beef or turkey for Italian sausage.
- Add a layer of mozzarella cheese on top before baking for extra cheesy flavor.
- Serve with a side of crusty bread for dipping in the marinara sauce.
