Ingredients

- 2 cups strawberries, sliced
- 2 cups rhubarb, chopped
- 1/4 cup honey
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1/4 cup almond flour
- 2 tbsp coconut oil, melted
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix strawberries, rhubarb, honey, lemon juice, and vanilla extract.
- Transfer the fruit mixture to a baking dish.
- In another bowl, combine oats, almond flour, coconut oil, and cinnamon.
- Sprinkle the oat mixture evenly over the fruit.
- Bake for 30-35 minutes until the topping is golden and the fruit is bubbly.
- Let cool slightly before serving.

- Use fresh or frozen strawberries and rhubarb.
- Adjust honey to taste for sweetness.
- Serve warm with yogurt or ice cream if desired.
