Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 1/2 cups pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, combine pumpkin puree, sugar, oil, eggs, and vanilla extract.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Fill muffin cups 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in muffin tin for a few minutes before transferring to a wire rack to cool completely.
