- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup Tzatziki sauce (see recipe below)
Instructions
- Preheat grill or grill pan to medium-high heat.
- In a bowl, toss chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
- In a bowl, combine quinoa, cucumber, tomatoes, olives, and red onion.
- Top with sliced chicken, feta cheese, and tzatziki sauce.
- Serve immediately.
Notes
- For a vegetarian option, replace chicken with grilled halloumi cheese.
- You can prepare the quinoa and tzatziki sauce ahead of time.
- Add lemon juice for extra taste.
