Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Tzatziki sauce (see recipe below)

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. In a bowl, toss chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
  4. In a bowl, combine quinoa, cucumber, tomatoes, olives, and red onion.
  5. Top with sliced chicken, feta cheese, and tzatziki sauce.
  6. Serve immediately.

Notes

  • For a vegetarian option, replace chicken with grilled halloumi cheese.
  • You can prepare the quinoa and tzatziki sauce ahead of time.
