Description

Ingredients

  • 1 can black-eyed peas, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, bell pepper, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
  3. Pour dressing over the bean mixture and toss gently to combine.
  4. Chill for at least 30 minutes before serving.
  5. Serve with tortilla chips or as a side salad.
