Ingredients

- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 cup corn, fresh or frozen
- 1 bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, bell pepper, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
- Pour dressing over the bean mixture and toss gently to combine.
- Chill for at least 30 minutes before serving.
- Serve with tortilla chips or as a side salad.

- For best flavor, let it sit for an hour before serving.
- Add jalapeños for extra spice.
