Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup buttermilk
  • Vegetable oil, for frying
  • 8 slices bacon, cooked and crumbled
  • 1 head lettuce, chopped
  • 2 tomatoes, diced
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, mix flour, salt, pepper, garlic powder, and paprika.
  3. Dip chicken pieces in buttermilk, then dredge in flour mixture.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Fry chicken until golden brown and cooked through, about 5-7 minutes.
  6. Drain chicken on paper towels.
  7. In a large bowl, combine lettuce, tomatoes, and bacon.
  8. In a small bowl, whisk together mayonnaise, lemon juice, and Dijon mustard. Season with salt and pepper.
  9. Add fried chicken to the salad and toss with dressing.
  10. Serve immediately.
