- 1/2 cup shredded mozzarella cheese
- 2 large eggs
- 2 tablespoons pumpkin puree
- 1 tablespoon almond flour
- 1/2 teaspoon pumpkin pie spice
- 1 tablespoon sweetener (erythritol, stevia, or monk fruit)
- 1/4 teaspoon vanilla extract
Instructions
- Preheat your mini waffle maker.
- In a bowl, mix together the mozzarella cheese and eggs.
- Add the pumpkin puree, almond flour, pumpkin pie spice, sweetener, and vanilla extract. Mix well.
- Pour half of the batter into the preheated waffle maker.
- Cook for 3-5 minutes, or until golden brown and crispy.
- Repeat with the remaining batter.
- Serve immediately and enjoy!
Notes
- Adjust sweetener to your taste.
- For a crispier chaffle, cook a little longer.
- Store leftover chaffles in the refrigerator. Reheat in a toaster or waffle maker.
