Make easy and delicious pumpkin keto chaffles for a quick breakfast or snack.


Ingredients

Scale
  • 1/2 cup shredded mozzarella cheese
  • 2 large eggs
  • 2 tablespoons pumpkin puree
  • 1 tablespoon almond flour
  • 1/2 teaspoon pumpkin pie spice
  • 1 tablespoon sweetener (erythritol, stevia, or monk fruit)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your mini waffle maker.
  2. In a bowl, mix together the mozzarella cheese and eggs.
  3. Add the pumpkin puree, almond flour, pumpkin pie spice, sweetener, and vanilla extract. Mix well.
  4. Pour half of the batter into the preheated waffle maker.
  5. Cook for 3-5 minutes, or until golden brown and crispy.
  6. Repeat with the remaining batter.
  7. Serve immediately and enjoy!
