- 2 medium zucchini, grated
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon garlic powder
- Vegetable oil, for frying
Instructions
- Grate zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to drain excess moisture.
- Squeeze out as much moisture as possible from the zucchini using your hands or a clean kitchen towel.
- In a bowl, combine zucchini, egg, flour, Parmesan cheese, parsley, and garlic powder. Mix well.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening slightly.
- Cook for 2-3 minutes per side, or until golden brown and crispy.
- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Serve with your favorite dipping sauce, such as ranch or tzatziki.
