Ingredients

  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1 large egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon garlic powder
  • Vegetable oil, for frying

Instructions

  1. Grate zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to drain excess moisture.
  2. Squeeze out as much moisture as possible from the zucchini using your hands or a clean kitchen towel.
  3. In a bowl, combine zucchini, egg, flour, Parmesan cheese, parsley, and garlic powder. Mix well.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil, flattening slightly.
  6. Cook for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
  8. Serve immediately.
