Instructions
- Grate the zucchini and squeeze out excess moisture.
- In a bowl, combine zucchini, corn, flour, Parmesan cheese, egg, garlic, salt, and pepper.
- Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening slightly.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove fritters and place on a paper towel-lined plate to drain excess oil.
- In a small bowl, mix sour cream, lime juice, and lime zest to make the lime crema.
- Serve the fritters warm with the lime crema.
