- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Grate the zucchini and squeeze out excess moisture.
- In a bowl, combine zucchini, flour, Parmesan cheese, herbs, egg, and garlic powder. Season with salt and pepper.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
- Serve immediately.
Notes
- For extra crispy fritters, ensure you remove as much moisture as possible from the grated zucchini.
- You can substitute other cheeses like Pecorino Romano or Asiago.
