Instructions
- Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 15 minutes to drain excess moisture.
- Squeeze out as much liquid as possible from the zucchini using your hands or a clean kitchen towel.
- In a bowl, combine the drained zucchini, egg, flour, Parmesan cheese, and pepper. Mix well.
- Heat olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with a spatula.
- Cook for 3-4 minutes per side, until golden brown and crispy.
- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
- Serve warm and enjoy.
