- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup shredded Gruyere cheese
- 1/4 cup dry white wine (optional)
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked rice
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and cook until caramelized, about 20-25 minutes, stirring occasionally.
- Add minced garlic and cook for another minute until fragrant.
- Stir in chicken broth, heavy cream, white wine (if using), thyme, salt, and pepper. Bring to a simmer.
- Add chicken pieces to the skillet and cook until chicken is cooked through, about 8-10 minutes.
- Stir in cooked rice and Gruyere cheese. Cook until cheese is melted and everything is heated through.
- Serve immediately.
Notes
- For a richer flavor, use homemade chicken broth.
- You can substitute Swiss cheese for Gruyere.
- Add a splash of balsamic vinegar for extra depth of flavor.
