Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup dry white wine (optional)
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onions and cook until caramelized, about 20-25 minutes, stirring occasionally.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in chicken broth, heavy cream, white wine (if using), thyme, salt, and pepper. Bring to a simmer.
  5. Add chicken pieces to the skillet and cook until chicken is cooked through, about 8-10 minutes.
  6. Stir in cooked rice and Gruyere cheese. Cook until cheese is melted and everything is heated through.
  7. Serve immediately.

Notes
