Description

A moist and flavorful banana bread made with cottage cheese for added protein and texture.


Ingredients

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup cottage cheese
  • 1/2 cup sugar
  • 1/4 cup melted butter or oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas, cottage cheese, sugar, butter/oil, eggs, and vanilla.
  3. In another bowl, whisk flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use ripe bananas for the best sweetness.
  • Blend cottage cheese for a smoother texture if preferred.
