- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 liter club soda, chilled
- 1/2 cup heavy cream
- Ice cubes
Instructions
- Make strawberry syrup: Combine strawberries, sugar, and water in a saucepan.
- Bring to a simmer over medium heat, stirring until sugar dissolves.
- Simmer for 5 minutes, then remove from heat and let cool.
- Strain the syrup through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard solids.
- In a glass, combine 2-3 tablespoons of strawberry syrup with ice cubes.
- Pour in club soda, leaving room for cream.
- Gently pour heavy cream over the top.
- Stir gently and serve immediately.
Notes
- Adjust the amount of strawberry syrup to your sweetness preference.
- For a vegan option, use coconut cream instead of heavy cream.
