Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 liter club soda, chilled
  • 1/2 cup heavy cream
  • Ice cubes

Instructions

  1. Make strawberry syrup: Combine strawberries, sugar, and water in a saucepan.
  2. Bring to a simmer over medium heat, stirring until sugar dissolves.
  3. Simmer for 5 minutes, then remove from heat and let cool.
  4. Strain the syrup through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard solids.
  5. In a glass, combine 2-3 tablespoons of strawberry syrup with ice cubes.
  6. Pour in club soda, leaving room for cream.
  7. Gently pour heavy cream over the top.
  8. Stir gently and serve immediately.
