Description

Chipotle agrodolce tofu skewers paired with a refreshing avocado mango salsa. A sweet, sour, and spicy flavor combination.


Ingredients

  • 1 block extra-firm tofu, pressed
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle powder
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 mango, diced
  • 1 avocado, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • Lime juice to taste
  • Salt and pepper to taste

Instructions

  1. Press tofu to remove excess water. Cut into 1-inch cubes.
  2. In a bowl, whisk together olive oil, chipotle powder, apple cider vinegar, and maple syrup.
  3. Marinate tofu in the chipotle agrodolce mixture for at least 30 minutes.
  4. While tofu marinates, prepare the salsa. In a bowl, combine mango, avocado, red onion, jalapeño, and cilantro.
  5. Season the salsa with lime juice, salt, and pepper.
  6. Thread marinated tofu onto skewers.
  7. Grill or bake skewers until tofu is heated through and slightly caramelized.
  8. Serve tofu skewers with avocado mango salsa.

  • For a smoky flavor, grill the tofu skewers.
