Description
Chipotle agrodolce tofu skewers paired with a refreshing avocado mango salsa. A sweet, sour, and spicy flavor combination.

- 1 block extra-firm tofu, pressed
- 2 tablespoons olive oil
- 1 tablespoon chipotle powder
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 mango, diced
- 1 avocado, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- Lime juice to taste
- Salt and pepper to taste
Instructions
- Press tofu to remove excess water. Cut into 1-inch cubes.
- In a bowl, whisk together olive oil, chipotle powder, apple cider vinegar, and maple syrup.
- Marinate tofu in the chipotle agrodolce mixture for at least 30 minutes.
- While tofu marinates, prepare the salsa. In a bowl, combine mango, avocado, red onion, jalapeño, and cilantro.
- Season the salsa with lime juice, salt, and pepper.
- Thread marinated tofu onto skewers.
- Grill or bake skewers until tofu is heated through and slightly caramelized.
- Serve tofu skewers with avocado mango salsa.

- Adjust chipotle powder to your spice preference.
- For a smoky flavor, grill the tofu skewers.
- Salsa can be made ahead of time.
