A hearty and flavorful casserole perfect for a family meal.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 packet taco seasoning
- 6 corn tortillas, cut into pieces
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Add onion and green bell pepper to the skillet and cook until softened.
- Stir in tomato sauce, kidney beans, corn, and taco seasoning. Bring to a simmer and cook for 5 minutes.
- In a 9×13 inch baking dish, layer half of the tortilla pieces, half of the meat mixture, and half of the cheese.
- Repeat layers.
- Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Add a can of diced tomatoes for extra flavor.
- For a spicier casserole, add a pinch of cayenne pepper or a chopped jalapeno pepper.
