Description

A hearty and flavorful casserole perfect for a family meal.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 packet taco seasoning
  • 6 corn tortillas, cut into pieces
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  3. Add onion and green bell pepper to the skillet and cook until softened.
  4. Stir in tomato sauce, kidney beans, corn, and taco seasoning. Bring to a simmer and cook for 5 minutes.
  5. In a 9×13 inch baking dish, layer half of the tortilla pieces, half of the meat mixture, and half of the cheese.
  6. Repeat layers.
  7. Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let stand for 10 minutes before serving.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • Add a can of diced tomatoes for extra flavor.
  • For a spicier casserole, add a pinch of cayenne pepper or a chopped jalapeno pepper.
