Description

A refreshing Peruvian drink made from purple corn, fruits, and spices.


Ingredients

Scale
  • 1 cup purple corn
  • 1 pineapple, peeled and chopped
  • 1 apple, chopped
  • 1 quince, chopped
  • 1 cinnamon stick
  • 4 cloves
  • 1/2 cup sugar
  • 1 lime, juiced
  • 6 cups water

Instructions

  1. Rinse the purple corn under cold water.
  2. In a large pot, combine purple corn, pineapple, apple, quince, cinnamon, cloves, and water.
  3. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Strain the liquid into a pitcher.
  5. Stir in sugar and lime juice until dissolved.
  6. Chill before serving.
