A simple and delicious recipe for homemade Biscoff cookies.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup Biscoff cookie butter
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, baking soda, and salt.
- In another bowl, cream together Biscoff cookie butter, softened butter, granulated sugar, and brown sugar.
- Beat in the egg and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Drop tablespoon-sized dough balls onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to 5 days.
- For extra flavor, sprinkle sea salt on top before baking.
