Description

Ingredients

  • 1 1/2 cups oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together oat flour, baking soda, salt, cinnamon, ginger, and cloves.
  3. In a separate bowl, combine pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Pour batter into a greased loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
