- 1 teaspoon baking soda

- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together oat flour, baking soda, salt, cinnamon, ginger, and cloves.
- In a separate bowl, combine pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Pour batter into a greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
