Description

Moist and flavorful banana bread made with buttermilk.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. In a separate bowl, combine mashed bananas and buttermilk.
  6. Add the wet ingredients to the dry ingredients alternately, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
