Ingredients

- 2 medium zucchinis, cut into fries
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- Olive oil spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, combine flour, garlic powder, salt, and pepper.
- In another dish, place the beaten egg.
- In a third dish, mix panko breadcrumbs and Parmesan cheese.
- Dip each zucchini fry in the flour mixture, then in the egg, and finally in the panko mixture, ensuring it’s fully coated.
- Spray the air fryer basket with olive oil.
- Place the zucchini fries in a single layer in the air fryer basket. Avoid overcrowding.
- Spray the zucchini fries with olive oil.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately.
Notes
- For extra crispiness, you can double dip the zucchini fries in the egg and panko mixture.
- Adjust cooking time based on your air fryer model.
- Serve with your favorite dipping sauce, such as marinara or ranch.
