Instructions
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a bowl, combine the grated zucchini, flour, Parmesan cheese, egg, and garlic.
- Season with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.

- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
