Description
A quick and healthy version of vegetable lo mein that’s ready in just 30 minutes. Packed with fresh veggies and tossed in a savory sauce.
Ingredients

- 8 oz whole wheat lo mein noodles
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 cup shredded carrots
- 2 cups broccoli florets
- 2 tbsp low-sodium soy sauce
- 1 tbsp hoisin sauce
- 1 tsp sriracha (optional)
- 2 green onions, sliced
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- Heat sesame oil in a large pan over medium heat.
- Add garlic and ginger. Stir for 30 seconds.
- Add bell pepper, carrots, and broccoli. Cook for 5 minutes.
- Stir in cooked noodles, soy sauce, hoisin sauce, and sriracha. Mix well.
- Cook for 2 more minutes until heated through.
- Garnish with green onions before serving.
Notes
- Use any vegetables you prefer.
- For extra protein, add tofu or chicken.
- Adjust spice level by adding more or less sriracha.
