Description

A quick and healthy version of vegetable lo mein that’s ready in just 30 minutes. Packed with fresh veggies and tossed in a savory sauce.


Ingredients

Scale
  • 8 oz whole wheat lo mein noodles
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 2 cups broccoli florets
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sriracha (optional)
  • 2 green onions, sliced

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Heat sesame oil in a large pan over medium heat.
  3. Add garlic and ginger. Stir for 30 seconds.
  4. Add bell pepper, carrots, and broccoli. Cook for 5 minutes.
  5. Stir in cooked noodles, soy sauce, hoisin sauce, and sriracha. Mix well.
  6. Cook for 2 more minutes until heated through.
  7. Garnish with green onions before serving.

Notes

  • Use any vegetables you prefer.
  • For extra protein, add tofu or chicken.
  • Adjust spice level by adding more or less sriracha.
